Callaway has a spacious visitor center and beautiful gift shop, which is open daily 10:30 a.m.-5 p.m. The winery offers complimentary informative tours weekends on the hour beginning at 11 a.m., with the last tour at 4 p.m., and during the week at 11 a.m., 1 p.m. and 3 p.m. Wine tasting ends at 4:45 p.m. Wine-tasting fee ($10) includes a souvenir glass and four tastes. One of the original wineries, established 1969, it is up a little hill, hidden from the road. This inviting winery is open for tastings daily. They produce over 14,000 cases of wine annually and distribute to store and fine restaurants in Southern California. Wiens Family Cellars • Temecula
Wiens Family Cellars is a family owned and managed winery, famous for producing world class "big red” Temecula wines, using fruit sourced from the Temecula Valley.
Their wines are produced using traditional methods to make some of the finest Temecula wines. The grapes are harvested at optimal maturity, and the wine is crafted in small lots with minimal handling.
In making their reds, the berries are gently removed from their stems and the primary fermentations occur in small bins. Wines are monitored and aged using a meticulous process of sensory analysis, and finished using specific types of oak barrels along with the appropriate ratio of new and aged wood to complement fruit flavors, stabilize color and add complexity.
For white wines, the juices are gently pressed from grape clusters, and then slowly cold fermented with special yeasts to preserve and enhance delicate fruit flavors.
